    1. Ingredients

    • Prime pork ribs: 1.2 – 1.4 kg
    • Australian oranges: 1 large
    • Brown sugar
    • Black pepper
    • Garlic powder
    • Salt
    • Seasonings: oyster sauce, chili sauce, ketchup, vinegar, and beef seasoning
    • Ginger powder, Chili powder
    • Rosemary leaves: 6 sprigs
    • Fresh garlic: 2 bulbs

    • Foil paper

    3. Step-by-step Guide

    • Step 1: Prepare the Ribs

    After purchasing the ribs, rinse them thoroughly with cold water. Then pat the ribs dry with paper towels.

    Once the ribs are water-free, use a knife to remove the inner membrane. Then gently score the meat to allow the spices to penetrate.

    • Step 2: Marinate the Ribs

    Evenly mix the following spices: 4 tbsp brown sugar, 1 tbsp black pepper, 1 tbsp garlic powder, 1 tbsp salt, 1 tbsp seasoning, 1 tbsp ginger powder, and 1 tbsp chili powder.

    Afterward, evenly sprinkle these spices onto the ribs, use your hands to rub them in, ensuring the ribs absorb the flavors. Wrap the meat tightly in foil and marinate for about 60 minutes.

    • Step 3: Prepare the Meat Grilling Sauce

    Grate the peel of the orange finely. Then halve one of the oranges, squeeze out the juice, and thinly slice the other half.

    For the meat grilling sauce, you'll need: 2 tbsp oyster sauce, 2 tbsp tomato sauce, 2 tbsp chili sauce, 2 tbsp vinegar, 1 tbsp minced garlic, 3 tbsp brown sugar, 1 tbsp black pepper, and the grated orange peel. Mix this combination well.

    • Step 4: First Round of Grilling the Ribs

    Place the marinated ribs wrapped in foil into the oil-free fryer. Grill the ribs at 150°C for 60 minutes.

    • Step 5: Grill the Ribs for the Second Time

    After grilling for 60 minutes, take the ribs out of the grill tray. Unwrap the silver foil and generously brush the prepared sauce over the ribs. Then, add sliced oranges, thyme leaves, and garlic on top of the ribs and continue grilling.

    Next, place the ribs back into the grill at a temperature of 180 degrees for about 10 minutes. 

    4. Finished Product
